Beer Description
The beer is still hard for any of us to really define, it’s really one of a kind. At 8.5% ABV, it would probably be most akin to a strong Flander’s Brown.
Thursday hallmarked our first bottling of another type of long aged oak beer with a variety of microorganisms in play . A spice blend was involved as well as some dark Belgian Candi Sugar during the kettle boil. That part we controlled. The rest was up to Brettanomyces, Lactic Acid Bacteria, and whatever else decided to visit the fermentation as we left each barrel open to air for an intentional short period of time. As to the name, he’s a demon, we named the beer after a demon. Space Dragon was too grade school.
