48 hour kettle sour aged for 8 months in gin barrels with 42lbs of blackberry puree. Great acidity that pairs well w/ botanical gin notes and dark fruit notes.
Soured wort in our kettle for 48 hours before transferring it into four different Bilberry Black Hearts Gin barrels. Aged for 8 months and each received 42lbs of pureed fruit. Great acidity that pairs well w/ botanical gin character from the barrel. Tons of dark fruit notes abound in aroma and flavor.
