Beer Description
Published in 1728, Ephraim Chambers’ Cyclopaedia contains the first known written reference to the making and consuming of brandy. Bottled in 2018, Cigar City Brewing’s Cyclopaedia is an Apple Brandy Barrel-aged Barleywine-style Ale. Enjoy in a snifter while poring over archaic tomes. An assertive nose of toffee, apple caramel cake and blackstrap molasses allows brief notes of chocolate and white oak. Spicy and viscous on the palate, Cyclopaedia offers flavors of bread crust and dark chocolate as a foil to raisin pudding flavors that sit front and center. Wood-like flavors and caramel cake notes linger long on the palate.
