Bellatrix is a wonderfully balanced sour featuring blackberry and peach to give it fruity taste to help us hold on to summer a little longer. We originally intended on naming this sour after the reddish star in the Orion constellation because the color so closely resembles the beautiful red hue of this sour. But that name was already taken! So we went with another star in that constellation instead…
