Beer Description
Wheat beer made with the Belgian Wit yeast found in Josie’s wit, but a simpler, less hazy, less grain focused recipe. The idea was to have a light refreshing backdrop for the raspberries. The fruit was added as a puree in the secondary (late end of) fermentation. This allows all of the sugars from the fruit to be consumed, while retaining as much of the aroma and flavor as possible. The result is a dry, crisp wheat beer, with a yeast note of Belgian flavor, and a strongly present, but not overpowering raspberry flavor (and a nice pink hue).
