Beer Description
An IPA brewed with a lot of new to us techniques and ingredients. Heavy handed amounts of Cascade, Calypso and Hallertau hops were added to the mash to release bound thiols in the hops for the yeast to activate during fermentation to produce tropical fruit and citrus aromatics in the finished beer. Mosaic hop extracts were used in both the whirlpool and in dry hopping. A modified American Ale yeast strain that was developed for its ability to unlock thiol precursors in hops and malt, transforming them into intense tropical fruit aromatics was used
