Fieldwork White Dahlia

In the pantheon of underrated beer styles, few would be more worthy of wearing the crown than the Belgian Wit. Often looked past for its close ties to a certain five letter word; this style offers so much more than just a “wheat beer.” With a respectably approachable ABV, soft body, low bitterness, and citrus-forward profile, a good Belgian Wit can tick all of the boxes. We decided to take inspiration from the brewing scene of the early 2000’s; a time when brewpubs were regaled for their ability to crush classic styles. For White Dahlia we kept things simple, managing fermentation to boost as much of the fruity, citrus esters as possible, while subduing phenolics to the background with hints of spice and white pepper, then finished the beer off with a pinch of coriander alongside sweet orange peel and grapefruit peel. No need to serve with a wedge of fruit, White Dahlia already has the citrus you want in perfect balance.
