Eric Bordelet, former sommelier of restaurant Arpège in Paris, began his quest of making authentic cider in 1992 in his native Normandy. Of his four different sparklers, this one highlights flowers, earth, and Pear (of course!), all framed by just-there tannins and crisp acidity.
