Wine Description
White wine obtained from grapes of the historical “Pecorino” vines, hand-picked during the third decade of August. The grapes undergoes a cold pre-fermentative pellicular maceration or 18 hours. Subsequently it is de-stemmed and squeezed in inert atmospheres (with nitrogen) in order to preserve the aromatic substances. After alcoholic fermentation, the wine is racked and is left on its own lees for about five months in steel containers.
