Beer Description
Ommegang ales are living beers, as exemplified by the secondary fermentation in Gnomegeddon, which is accomplished with Brett yeast – a wild yeast known for its addition of complex barnyard funk to both the flavor and aroma, giving a new edge to one of our most beloved ales.
The Brett yeast is slow-acting and as a result Gnomegeddon spends at least three months refermenting in the bottle before we release it. The yeast continues to act well into the future, so consider drinking some now and cellaring some more for later enjoyment and reflection.
