Beer Description

Gosesque Cherry is a spin on our Berlinerish series. We blended some barrels of our Berlinerish base that had been aging for a range of 5-12 months, then re-fermented that blend on 2lbs per gallon of whole organic sweet cherries. We used whole coriander for this beer, which we cracked in house and decided to ferment along with the cherries. The hope was that the fermentation process would bring out some extra floral notes from the coriander. After a couple months, we blended the fruited barrels into our packaging tank, and finished with a small amount of sea salt from Jacobsen Salt Co out of Oregon. Then it was bottle conditioned with blueberry blossom honey. Gosesque Cherry has a medium to low level of carbonation and an insane amount of cherry character. The coriander and salt are reserved but definitely increase the complexity of the beer. It’s pretty tart, but not so sour that you can’t drink a whole bottle by yourself.
