It’s been an exciting few weeks at Equilibrium. We had a small-scale experiment that we consider a breakthrough for our hop program and we had a glycol chiller attempt to weld Ricardo to the roof. We were able to trigger an intense amount of the “EQ juice” at the small scale for the first time in a very controlled environment. Subsequently, we have developed and solved a full set of differential equations and have been working on fitting parameters to understand and optimize this very complex dynamic. While we still have a few things to figure out, we are very happy with this first attempt and this will shape our hop program to come. Hop Wave 14 is a suped-up version of dHop14 with a touch of lactose. The aroma and flavor are more intense with touch of vanilla sweetness and extra smoothness from the lactose. Our experiments are currently on high as we continue to refine and understand what happened at the large scale and we expect amazing beers to come as we further dial this in.
