This beer serves to showcase the best of each yeast strain: the bucolic funk of the Brett; the sharp acidity of our house Lacto, the orchard sweetness of the Sacc, and the no-holds-barred tartness of the Pedio, all of which combine with the plums and heather tips to create a complex sour that keeps changing shape with each sip.
