35% American Spontaneous Ale.
25% Chardonnay must.
Angel Blend ’18 started its journey as an American Spontaneous Ale fermented in an American oak barrel and macerated on New Jersey Saturn “donut” peaches at a rate of 5 pounds per gallon.
When the spontaneous beer was done with its primary fermentation, it was moved off the donut peaches and replaced with unfermented, noble-hopped saison wort spiced with grains of paradise, bitter Curacao orange peel, ginger and black pepper.
The saison fermented on the second-use donut peaches with the yeast from the spontaneous beer, a healthy pitch of a single strain saison yeast, and pureed black figs from Calabria, Italy.
The two finished beers were then blended in an American oak whiskey barrel that previously held Tomcat gin from Caledonia Spirits in Vermont, along with California chardonnay grapes and must, and inoculated further with Brettanomyces Bruxelles.
