RASPBERRY | DRY | EARTHY Saison Framboise pours a beautifully vibrant, deep red hue into a glass and forms an effervescent cap of light pink, aromatic foam. This lively ale was hopped with Hallertau Blanc and fully attenuated with a locally sourced saison yeast strain that provides a dry, wine-like, crisp, mineral finish. During active fermentation we injected loads of raspberry and the fruit sugars contained within were broken down by the eager yeast cells and converted into alcohol, c02 bubbles, and wonderful, complementary, aromatic, fruity esters and earthy phenols. Post fermentation we blended the super dry raspberry saison with more raspberry to give it a touch of sweetness for balance. The result is a highly drinkable, spritzy, bright red raspberry flavored farmhouse ale with unique yeast character and a refreshingly dry finish. We get notes of bright red raspberries, white grape must (Sauvignon Blanc, Pinot Grigio, Riesling), sparkling rosé, jam fizz, peppercorns, and gooseberries.
