About the brewery

Our farmhouse brewery is now open and distributing beers throughout the Central Illinois area. We brew cellar-fermented, real ales and lagers on our off-grid farm. From gooseberries to apple mint, we grow many of the ingredients that make our beer unique and flavorful.

Big Thorn beer is fermented in our underground cellar, allowing for seasonal temperature fluctuations that add complexity and interest to the beer-making process. Additionally, most of our beers spend time in a wooden barrel. Whether it’s a couple weeks or a couple years, we believe that wood has a fantastic mellowing effect on beer. Not to mention added notes of bourbon, tequila, wine, or rum. After barrel-aging, our beer is naturally carbonated at the time of kegging/bottling. After about three weeks in the cellar, the beer is ready to be enjoyed.

Although we are not currently open to the public, you will find our brews at fine establishments throughout Illinois. We look forward to sharing our beer with you!
