From Georgetown, IL, Big Thorn Farms is trying to bring a sense of terroir back to beer, with a botanical twist. Growing as much of their own hops, herbs, and fruit as they can manage on their 15 acre farm, they also eschew oaken barrels in favor of fermenting and aging on toasted logs cut from their own property.
