An unfiltered India Pale Ale brewed with oats for extra body and haze. Grapefruit and blood orange are added at the end of fermentation to give this beer a nice citrus finish, complemented by a triple dose of dry hopping with Simcoe, Washington Crystal, and Lemon Drop.
This is an exclusive blend of our Gueuze Lambic with our Framboise Lambic, both of which were aged in French Oak barrels for 2-years right in our "Silk Lounge" in Allentown. Lambics are traditionally fermented with wild yeast and in this case, we used Lactobacillus, Pediococcus, and Brettanomyces for a complex flavor profile including nice Oak tones poking through the sour.

We selected a yeast that would allow us to fully attenuate in order to play up the "jammy" characteristics of this hop. Introduced in 1989 along with their Añejo release is the now iconic Patrón Silver Tequila. Co-founded by John Paul DeJoria (of John Paul Mitchell hair products), Patrón first introduced the world to "ultra-premium" tequila. Their standard line is produced by using half tahona-crushed agave and half modern roller-mill crushed agave. The agaves are slow-roasted in an oven before fermentation in wooden vats. Francisco Alcaraz is their Master Distiller & Blender who created the recipe for the tequila and produced it at the Siete Leguas distillery until they built their own in 2002. Their agaves are sourced from Los Altos in Jalisco.
