Not much to analyze about IDIPA. Sometimes you just crave a dank IPA to sip on, so that’s what we made. Multiple hops, multiple malts and multiple yeasts combined in a way to placate the dank side of our desires. Drink IDIPA because it’s the dankness you need.
Brussels Calling was our first attempt to make a beer in the new Brussels facilities. A Blonde Ale with a new recipe but very close to Taras. Just a bit more malt and a different hop (Hallertaü Hersbrueker) for the aroma.
Old-school Pacific Northwest-style Red IPA. Columbus, Simcoe, Chinook, and Northern Brewer hops coat the tongue with woody, spicy, piney, and orange citrus flavors that linger. Balanced with a sturdy malt backbone that give a caramel sweetness and a bit of toastyness. Urban lumberjack’s delight.
Simply built, this golden-hued ale exhibits tongue-coating citrus and fruit hop flavors. Citra hops combine with Thomas Fawcett Pearl malt for the second exploritory beer from our lupulin advisory committee.
As our friend Yvan De Baets writes, farmhouse ales were "either sour or very bitter." This is the latter -- a bitterly refreshing, eurocentric farmhouse ale produced by step mashing a 100% pilsner grist and hopping heavily with Hallertau Hersbrucker and Tettnang.
