Our intentions were to create an oily, intense, West Coast monster with new favorite, New Zealand-grown Nectaron hops, alongside limey skittles-esque NZ Cascade and the almighty Mosaic (and some Mosaic Cryo too!). The resulting beer is layered with beautiful hoppy flavors of nectarine and peach flesh, zippy tangy key lime and that awesome Mosaic berry note we all know and love. We lagered the beer in the foeder with our mixed culture for over a month before packaging, where it then naturally conditioned in the can. Bright, refreshing, and with a touch of palate-cleansing bitterness in the finish, this is exactly the kind of beer we want to be drinking to welcome the warmer weather that’s just around the corner (or so we hope!)

Then we filled up some Weller 12 bourbon barrels and let time work its magic. Just over two years of it, actually. What came out of those barrels is something we're really proud of. All that malt sweetness got even deeper, and the bourbon barrels added their own thing with vanilla, oak, and that unmistakable bourbon warmth. There's a brown sugar quality that runs through every sip, finishing with hints of chocolate that linger. At 14.5%, it's definitely a sipper, but it's smooth enough that you'll want to take your time with it anyway.

    Mai Tai P.A. is our flagship. Our ride or die. The liquid expression of an obsession with Mosaic hops. After medaling at the 2024 World Beer Cup (its sixth medal at a major beer competition) we decided to take things to the next level. This isn’t just a Double Dry Hopped version of Mai Tai, this is a small batch attempt at Mai Tai perfection. Yes, the layers of Mosaic driven flavor are exquisite (thanks to several well timed additions of high quality lupulin), but we didn’t stop there. We worked hard to elevate everything: the quality of the bitterness, the color, the clarity, the foam, the mouthfeel… The result? Well, to be honest, we wanted to keep it all for ourselves. This Lambic-inspired beer expresses the house characteristics of both Side Project and de Garde by brewing a turbid wort with aged hops and fermenting it entirely in a French Oak Foedre with a blend of our cultures and our favorite Oregon Red and Black Raspberries. After aging, we naturally conditioned this blend until it was ready to be shared with you.
