Beer Description

The heart of Weidman & Groh’s “Speierling” is actually not an apple, but a close relative, the speierling fruit, which comes from the rowan tree and is harvested early before it has time to fully ripen. Used in German apfelwine production as a blending fruit, Weidman & Groh have made it a centerpiece of this cider. The apples (Boskop, Landsberger Renette, Bohnapfel and more) are handpicked and pressed in a traditional baling press. After two weeks of fermentation, the speierling juice is added. Six weeks after, the bottles are racked to separate yeast and sediment. A second racking and filtration after 2 weeks is the final step before bottling. The result is a beautiful, wine-like, non-sparkling cider that holds its own against riesling as the perfect pairing for spicy food.
