Wine Description
The grapes from older vines , were hand-picked at the height of ripeness . After careful selection suffer a crushing- destemming followed by a short cold maceration with the skins , finally it takes a very soft pressing . The must obtained after static clarification , fermented in steel tanks at controlled temperature of 16-18 ° C . After 3 months of aging on the lees , the second fermentation takes place in small stainless steel autoclaves according to the Charmat method.
