Beer Description
This wood-aged brett saison is dry, tart, lightly acidic and well balanced. Expect vinous, tropical, bubble gum, and earthy aromas.
The first release from our Wooden Soul series of sour, funky, wild, and barrel-aged beers, Wooden Soul #1 began as our Derailed Series Saison. Brewed with Dupont yeast, then finished with Brux III and Brettanomyces Claussinii, the beer is a blend between the three yeast strains. Residing in white wine barrels, the brett has taken up a healthy residency in the barrels. Expect aromas of tropical fruit, grape, and earthy funk. This beer is dry, tart, and well balanced, with moderate to high carbonation.
