Doppelbock is the quintessential strong German Lager. It delivers plenty of grain derived complexity; candied fig, caramelized molasses, dark toasted bread. But what makes Doppelbock so special is – in true lager fashion – it finishes surprisingly dry and clean.
This is a traditional German recipe. We used 100% German ingredients and performed the old-school German mashing regimen; decoction. This big beer took three months to ferment and lager in our cellar. We took no shortcuts in bringing this iconic beer style to Central Illinois.
