Fermented using wild yeast presents on the apples at pressing. It’s dry and tart with hay notes on the nose.
It’s one of our small batch ciders. It was an experiment. The juice for our ciders goes through UV pastuerization which kills all bacteria but some yeasts are hardy enough to survive. Normally a cider is inoculated with a large yeast culture that is desired. This yeast culture dominates the fermentation and lends the cider those particular flavor phenols. With this cider, we let the wild yeast grow into the dominant culture. Our experiment had a wonderful outcome!
