Beer Description
barrel-aged sour Abbey-style Dubbel with tart cherries
Last year, we took freshly-emptied American oak barrels still plump with juicy California cabernet sauvignon and filled them with our Belgian-style dubbel, Depravity or Divinity. Inoculated with a wild blend of brettanomyces, lactobacillus and pediococcus, the barrels bore a viciously complex sour ale, acid-forward with hints of dark fruit, funk and just enough alcohol to send your mind wandering. That beer was called Deep Thoughts. Once drained dry, the barrels were refilled with more Dubbel. After the bacteria did their voodoo on this round, we pulled the beer and spiked it with tart cherries. As you taste through subtle layers of all 3 beers, another deeper thought might begin to emerge, only to be snuffed out just in time for you to get a fleeting glimpse of enlightenment.
