Beer Description
For 19 months we aged the base for one of our house Double IPAs, King Juice, in stainless steel with a house-cultured blend of Brettanomyces until the beer was transformed into something entirely different. We then dry-hopped heavily with Mosaic, Amarillo and Ekuanot to compliment the aromas and flavors contributed by the Brett. The resulting beer is an indulgent wild ale, not overly tart but significantly funky with bold aromas of a strawberry-mango-pineapple smoothie and flavors of Capri-sun summers and overripe fruit funkiness. An active Brett culture in the bottle will continue to transform this beer over time. Bottle conditioned.
