Beer Description
Process Notes: A riff on Soaring Royal/Gossamer/Diamond 75. A variety of base malts and flaked adjuncts build a base of biscuit and subtle sweetness without using much specialty malts. Celeia and crystal used throughout the kettle and whirlpool, we are looking for more traditional english characteristics, think bitters and english pales. The pale malt was grown by Phil’s uncle in downstate IL and malted in Indiana, the celeia comes from Michigan and the Crystal from Hallowed Hop Farms in central Illinois.
Tasting Notes: Fresh cut hay, green tea and honeydew melon. Silky oat body with a slight biscuit sweetness.
