Parched Eagle Gluten Tolerant Junior

This is the Polar Vortex version of Gluten Tolerant itself that has semi-legendary status in the Parched Eagle community. The first batch released in August 2016 was a true huge malted wheat/barley monster that checked in at a most robust 10.7% abv. We brewed the same beer last month but the polar vortex hit our drafty little brewery hard smack dab in the middle of fermentation: cooling the beer down too much for the finicky yeast strain used. Extreme measures were engaged in to warm up the fermenting beer and we’ve managed to have it ferment enough but it’s finishing out at “only” 8.8% abv so hence it’s GLUTEN TOLERANT JR! Plenty of caramel malt flavor/sweetness with a bit of spicy wheat and balancing IBUs in the finish.
