This beer was fermented and lagered in our temperature-controlled American oak foudre for six weeks, yet its story begins ten thousand years prior, in the Fertile Crescent of the Middle East. One of the earliest domesticated grains, Einkorn Wheat does not create seeds that flourish in the wild; instead requiring human cultivation for its continued existence. We acquired this ancient grain from our good friends at Farm and Sparrow Bakery. From the toils of our ancestors to the sweat of our contemporaries, we present to you this soft, slightly floral lager upon which to contemplate your own history.
