Élevage: spontaneously fermented and matured in 229L sauvignon blanc french oak barrels, racked onto whole raspberries a 350L french oak rosé barrel and stainless steel, then blended. additionally racked onto sliced whole tahitian vanilla beans in stainless steel. an average of fourteen months at bottling.
Fruit.: freshly harvested (never frozen) ripe to overripe whole NJ red raspberries, organic tahitian vanilla beans
