Beer Description
This rustic saison is fermented by Farmhouse Ale yeast, and with the aid of Amylo, the final gravity is an incredibly dry .5 degrees plato. Despite the very low sugar content, the 8.4%abv is hardly noticeable, and the mellow Saphir, Huell Melon, and Styrian Celiea hops provide a nice earthy, noble backdrop. Estery yeast aromas abound, with candied fruit and light gingery spice. ‘Ahoy-hoy’ is reported to be Alexander Graham Bell’s(inventor of the telephone in 1876) preferred greeting when answering the phone. 1876 was the same year as the founding of the Fred Harvey Co, and although ‘Hello’ quickly won out as the standard greeting, I can only hope that Mr. Fred Harvey once uttered the words ‘Ahoy-hoy.’
