Beer Description
Ale brewed with 100% local malt from Carolina Malthouse. We used a lot of honey in this one as well as lemon balm and peel. It’s dry but balanced by a nice sweet yam flavor and a hint of brettanomyces (wild yeast) spice. This is our first mix fermentation beer and is really good. The name Jimi Smith’s is in reference to the local home brewer we collaborated with on this project.
