Beer Description
Santa Dorothea is our new barrel aged sour conditioned on tart cherries. For this beer we selected barrels from our cellar containing Ales that have been aged for a minimum of 1 year with various “Wild Yeasts”. We then bottle conditioned with a strain of champagne yeast to provide a final re-fermentation in the bottle. Enjoy this beer fresh or cellar age to develop the flavors.
