Beer Description
Austin starts off as a delicate, and complex farmhouse ale with a bit of pleasant funk and gentle acidity. We took one of our most balanced farmhouse ales yet, and let it rest in the Sauvignon Blanc barrels that previously held Unlikely Foragers for a little over 10 months. Itβs since rested over a year combined in both barrels and bottles. The metamorphosis is beautiful producing a delicate and layered flavor, lovely funk, light hay, floral grape notes with a kiss of sweet fruit and a underlying oak character with each sip. This ale is gentle, soft, and dry with a beautiful creamy aspect to its body and a tongue clique tart finish. We are really proud of this one as it points to where our barrel aged program is headed. Look for more iterations in the coming weeks. BAASB will continue to evolve over time if properly cellared.
