Beer Description
This lively ale was hopped with Hallertau Blanc and fully attenuated with a locally sourced, saison yeast strain that provides a dry, white wine-like, crisp, mineral finish.
During active fermentation we injected loads of blackberry and the fruit sugars contained within were broken down by the yeast cells and converted into alcohol, c02 bubbles, and wonderful, complementary, aromatic, fruity esters and earthy phenolics.
Post fermentation we blended the super dry blackberry saison with more blackberries to give it a touch of balancing sweetness.
We get notes of fresh blackberries, white grape must (Sauvignon Blanc, Pinot Grigio, Riesling), sparkling blueberry wine, vinous earth, and boysenberry jam.
