Beer Description
Our latest Imperial Sour uses Sourvisiae®, which is a ale yeast strain capable of producing lactic acid during fermentation, thus providing a cleaner and more reproducible souring process, with much shorter fermentation times.
As fermentation neared completion, prickly pear and passion fruit were added and allowed to mingle into producing a wonderfully tangy citrusy and colorful sour ale. With the additions of lime and orange zest, this is a tart, complex and refreshing sour ale for the adventurous drinker.
