Beer Description
Brewed using a Norwegian farmhouse yeast strain and Japanese knotweed shoots harvested from the banks of West Kill creek. This plant has wreaked havoc on riparian banks in the region causing erosion and quickly displacing native species. However, knotweed is also known for its many medicinal qualities using the plant’s young shoots which remarkably taste similar to rhubarb just with an extra earthy component to it.
