Beer Description
The end product of an exploratory collaboration with our friends at Definitive Brewing – the Altered Past to Definitive’s Altered Future.
We teamed up to test out a fun new yeast strain called Helio Gazer, which promises high levels of biotransformation in thiol-rich fermentations, pushing the aroma-potential of Hazy IPA’s to new heights, and intensifying the already rich, fruit-forward flavors that we seek in this style.
In brewing this beer, we utilized a malt-base of local Pilsner and Wheat, added New Zealand Cascade (Taiheke) into the mash, El Dorado Incognito in the whirlpool, and dry-hopped with Strata and Galaxy.
The resulting libation is semi-dry and quaffable, with a bright, almost vinous profile of Sauvignon Blanc, passion fruit, tangelo, and light pine. This one’s super fun to drink
