Beer Description
Our collaboration with Sundial Brewing & Blending comes out of our mutual admiration for saisons that exist in two worlds at the same time – paying respect to the earthy, funky, artisanal roots of the style while being aware of modern advancements in hop flavors and modern palettes. It is constructed with pilsner malt from Sugar Creek and unmalted einkorn from Janie’s Mill.
After hot fermentation with our house saison yeast we added a small but impactful dry hop charge of Grungeist hops. The resulting beer has complex and contrasting notes of peach pits, wet leaves, light nuttiness, cotton candy, dried strawberries, and earthy, grassy overtones.
This version was bottle conditioned with Sundial’s house mixed culture.
