Beer Description

Made together with Brauerei Schloss Eggenberg.

We grew 100% of the barley in this beer next to our brewhouse. This taste of place was amplified by custom malting the grains to different specs in small batches and blending this mixture in the mash tun. Karl brought some of his favorite hops from Austria — not possible to buy and the same they use in their celebrated Pilsner. It’s also the same Pils that turned us into fans of Schloss Eggenberg so many years ago. It was such a treat for us to make this beer together.

The two and a half months of production time allowed the custom estate malt and carefully selected hops to integrate, resulting in a smooth, full-bodied Pilsner with depth of character. This Pils offers rich layers of freshly leavened bread and sourdough crust with waves of floral and earthy hops. The grains and hops balance lead and supporting roles throughout the sip. Seems a good way to go about a partnership.

This beer is an ode to dreaming the impossible. To venturing down an improbable path, holding what’s said to be out of reach. Two family breweries combining different traditions to make this beer. While our castles in the air may differ, we’ve discovered that creating foundations under each of them is much the same. Made with estate barley we grow next to our brewhouse and select Austrian hops from their valley. Its combination, culmination, and continuation.
