Floating on the water, ever changing. In tune with all our dreams. For this collaboration we called upon our friends at Pollen Coffee + Flower Shop for inspiration. Pollen invites patrons to engage with intentional beverages, small producers, flowers, and self-expression. They have curated a truly unique and inviting space for all, from their sheer attention to detail to the charm of the cafe and its offerings. With this blend, our mixed culture base was aged on second-use peaches & peach leaves for a faint impression of peach. This allowed for a retention of a tart freshness and pleasant tannin profile. We cold conditioned the beer on World Ender from Cooperative Coffee, a custom blend roasted for Pollen. Lavender and orange blossom were added to lend more herbal depth and subtle complexity for a nuanced tasting experience. With hints of fresh citrus, freshly brewed coffee, and a bright floral bouquet, this beer is as unique as our collaborators.
