Beer Description
his Trappist-style beer is copper colored, double-decocted malty-rich beer with flavors of cocoa, caramel, and raisin bagel. A ferulic acid rest and open-fermentation allows for the Belgian yeast profile to really shine—with spritely notes of black pepper and a gentle floral character that in the words of Hagen, “takes me back to Brussels.” We also made a Westvleteren water profile for this one, which adds a mouth-coating, dry minerality; while the addition of candi sugar (a new adjunct for us in the brewery) dries it out even further, making you ready for the next sip (it’s the Belgian way of making a “Less Filling” beer). This beer is a sneaky one! It belies its 6.8% ABV, with no harshness or hotness, and showcases the malt backbone characteristic of Dovetail beers. A draft-only, taproom only release.
