Barrel-Aged Golden Sour Ale with Spontaneous Cultures
Stay among peace. Find yourself. Rest alongside this altar. It remains where you always need it. The Altar of Acid closes out with our most personal expression of our wild program. The 7th and final panel to be unveiled behind the wrap, is indeed one that began right here upon our dirt in our first ever taproom space. The simplest and most beloved, indeed. This cuvee marks 5 long years of making this beautiful tale of death and rebirth. The product of our locale, this spontaneous beer was made with Asheville city water, Riverbend Malt barley and wheat, house-aged hops, and the tidings of the air around us. Left to ferment in the open air, beneath our taproom peach trees (across from the Sloth and Selleck mural), each year the beer rests for varying lengths of 1 to 3 years. The nose on this beer is special, filled with juicy white nectarine fuzz, whipped lemon curd, and Loire-grown Chenin blanc. The culture will continue its residency at Burial by taking over our Brunello foudre, allowing us to offer you this 3-year blend each year.
