A wild sour fermented in whole organic apricots then aged in a 30-year-old Spanish brandy barrel. Full of the flavour of apricot pulp and skin with a beautiful funkiness and complexity developed by the natural microbes of the fruit, balanced by the gentle spirit and oak of the barrel.
