Beer Description
Some beers tell a story, and Coalesce is one we’re proud to share. This Dry-Hopped Czech Pale Lager (4.1% ABV) is the result of an unforgettable collaboration with our dear friends Jeff and Stu Cozzens of Schilling Beer Co. (@schillingbeerco) when they visited us for our inaugural beer dinner in December. What began as a night of food, beer, and conversation turned into a creative journey inspired by our shared passion for craft lagers and tradition. For us it became about blending floor malted English malt, an Italian dry hopping technique, a traditional Czech decoction schedule, and an uncommon hop grown in Germany to see how these different ideas Coalesce.
At its core is the rare and nearly forgotten Petit Blanc hop, found in the backyard of a former hop grower in France’s Champagne-Ardenne region. Thanks to our friends at Locher Hopfen, who lovingly cultivate this unique variety, we were able to bring its history and character into Coalesce. The name Coalesce perfectly captures its spirit—it’s the merging of ideas, techniques, and the camaraderie we share with Schilling. This is more than just a beer; it’s a celebration of the creativity that happens when passionate brewers come together.
