Dogfish Head Lil' Carmine

Lil’ Carmine is an intensely red hued fruit beer brewed with tart and sweet cherries and black currants. Brewed with a simple pale malt base and then fermented at low temperatures with a traditional Saison yeast, just under 3 pounds of fruit per gallon were then added to the tank to jump start a secondary fermentation and give this beer its characteristic flavor and color. Very reminiscent of a Belgian style fruit lambic, however this version did not undergo fermentation with wild yeast or bacteria. This blood red “Carmine” colored brew has strong notes of stone fruit with an extremely pleasant acidity. Enjoy it as an aperitif, or perfect for dessert with our bread pudding.
