A wild mash-up from Chicago’s Pipeworks: El Unicornio starts as a horchata-inspired ale brewed with rice, lactose, vanilla and cinnamon, then gets blended with bourbon barrel-aged Imperial Stout. Rich and creamy with sweet vanilla, warming cinnamon and horchata-like rice character layered over dark chocolate, roasted malt, caramel and bourbon-soaked oak. Dessert-like without losing its stout backbone, with warming barrel character bringing everything together. Strange, decadent and unmistakably Pipeworks.
