Beer Description
Famille is our house saison that is fermented and aged in our American oak foeder. It lives with an ever evolving house culture that is Brettanomyces heavy. We utilize a modified solera process where we never completely empty the foeder, but rather only package a portion of the tank and then promptly feed the culture with fresh unfermented wort to keep it alive and happy. This is our 5th packaging turn of
Famille and it has evolved to develop bright peach and meyer-like lemon notes, light and restrained acidity, and a strong sense of oak still carries through the finish. As always, our house saison is naturally conditioned/carbonated and cellared for further development allowing for a wonderful dry and effervescent experience.
