Wayward Lane + Timber Wayward Lumber Hunk

Double Mash Imperial Stout conditioned on Coffee and Vanilla.
When we started the planning for this collab with our good friends at Timber Ales, we knew a massive stout was the only legitimate option. We took design aspects from both breweries imperial stouts when designing the grist, starting with a base of Simpsons Maris Otter and Canadian two row, then layered in a number of roasted and caramelized malts, along with hefty doses of flaked oats and malted wheat. After two voluminous mashes and many hours of boiling in our direct fire kettle, we sent the incredibly viscous wort into a long slow fermentation. Upon completion we rested the liquid on Offshore Coffee Co Peru San Ignacio, and some beautiful Costa Rican Tsy Taitra Vanilla beans sourced through our friends @vanillasoftheworld. The result is a deeply layered stout with bold notes of caramelized brown sugar, full bodied espresso, candied dark cherries, toasted walnuts, and sweet cocoa. Don’t fret, most of this incredible base went into select spirt barrels prior to conditioning on adjuncts…see ya in a couple of years!
